Fermentation Maintenance Protocol
The full maintenance cycle for the 40-gallon medicinal ferment. Frequency is critical — the ferment is a living system that responds to management.
Daily
- Check brine level — top up with fresh 3.5% salt solution if evaporation has reduced level
- Visual check — no kahm yeast film on brine surface, all botanicals fully submerged
- Temperature check — record vessel temperature, confirm 18–22°C
- Sensory check — clean sour smell confirms healthy fermentation
Weekly
- pH measurement — test brine with pH strips or meter, target 3.2–3.8 mature. Take corrective action if out of range.
- Rotate one botanical bag group — B1→B2→B3→B4 in staggered 4-week cycle. Never replace all groups simultaneously.
- Add honey culture — 200–300ml freshly activated honey culture from designated perpetual mother (rotating monthly variety)
- Taste sample — assess sourness, flavor complexity, off-notes
Monthly
- Replace 25–30% of vegetable fraction with fresh minced material
- Add fresh glycine and ascorbic acid to brine (~20% monthly depletion)
- Full vessel interior inspection — check for deposits, discoloration
- Assess bubbling activity — mature ferment: slow steady bubbling is normal
- Harvest production quantity for concentration/packaging cycle
- Feed all perpetual mother culture jars (remove 50%, replace)
- Prepare new oxymel for the month's featured honey variety
Quarterly
- Partial brine renewal — remove 20%, replace with fresh prepared brine
- 50% botanical pack replacement — all bag groups refreshed in staggered rotation
- Full emulsifier/carrier refresh (lecithin, black seed oil, glycerol)
- Production batch concentration cycle (freeze concentration of brine fraction)
- Viability check on selected glycerol culture stocks
Annual
- Reserve 10–15% brine as starter culture — this established Lactobacillus community is the most valuable asset; label and refrigerate separately before emptying
- Full vessel empty and deep clean with hot water + food-grade vinegar rinse
- Air dry completely before restart
- Restart with fresh batch, 10% reserved brine as starter inoculum

Contamination Identification
