TPC Standards

Total Polar Compounds is the only fraud-resistant regulatory instrument for frying oil quality. Every other measure can be defeated by deodorization or sensory restoration.

Why TPC Is the Right Measure

Total Polar Compounds is the aggregate measure of all non-volatile oxidation products in frying oil:

  • Lipid hydroperoxides and their decomposition products
  • Aldehydes, ketones, epoxides
  • Polar polymers and dimers from triglyceride oxidation
  • Free fatty acids
  • Everything that shouldn't be there after heating

The critical property: TPC cannot be reduced by any sensory-restoration treatment.

  • Deodorization removes volatile early-warning compounds — TPC unchanged
  • Activated carbon removes color bodies — TPC unchanged
  • Antioxidant injection suppresses rancidity detection — TPC unchanged
  • Dilution with fresh oil reduces TPC proportionally — detectable by any retest

TPC is the only measure that requires the actual contaminants to be removed rather than masked.

European inspectors test TPC directly. Oil above threshold is confiscated. Operators are fined. The standard cannot be satisfied by sensory restoration — TPC is measured directly, not inferred from appearance or smell.

US Regulatory Gap

In the United States, a commercial fryer operator may legally serve food fried in oil at 40%, 50%, or 60% TPC — oil that would be confiscated in Frankfurt, Paris, or Vienna — with:

  • No legal consequence
  • No obligation of disclosure
  • No regulatory framework governing the practice

An onsite regeneration service may restore the sensory presentation of 60% TPC oil to apparent freshness and sell a subscription contract for continuous treatment, and no regulatory provision governs this practice whatsoever.

Measurement Methods

Professional (laboratory):

  • AOCS Official Method Cd 22-91 (chromatographic TPC measurement)
  • Dielectric constant measurement (portable instruments)

Commercial portable instruments:

  • FOM (Fat Oil Monitor) — dielectric constant, quick-read
  • Testo 270 — same principle
  • Used by European health inspectors in the field
  • ~$300–500 USD, very accurate

The effervescence test (proxy, free): As described in [[Aqueous Phase Chemistry]] — baking soda effervescence is proportional to FFA content, which correlates with overall TPC. Not precise enough for regulatory compliance but adequate for operational monitoring.

The Correct Standard for a US Petition

The petition asks for: Maximum 27% TPC (the more permissive European standard)

  • Starting with 27% rather than 25% is politically pragmatic — harder to argue it's too strict when Germany and France have used it for decades
  • Once established, tightening to 25% in a subsequent rulemaking is straightforward

With explicit provision that TPC measurement cannot be substituted by sensory assessment — this forecloses the industry argument that regular sensory checks are equivalent.
