Sensory QC Protocol

Sensory QC Protocol

Using the evolved sensory apparatus as an analytical instrument. Establish a reference profile. Compare each batch against it. Deviation indicates chemistry change.

The Reference Batch System

For any reliable sensory QC, a reference standard is required:

For fat processing:

  • Keep a sealed jar of freshly processed stearin immediately after completion of the 11-step protocol
  • This is your reference for: color, odor at 70°C, water drop surface tension behavior
  • Label with date and FFA titration result
  • Replace every 6 months
  • Photograph each QC comparison for trend tracking

For fermented preparation:

  • After a batch is verified by pH measurement, taste assessment, and trigeminal profile
  • Take a sealed small jar as the reference
  • Refrigerate; replace with each new batch
  • All subsequent batches compared against this reference

Fat Quality Assessment

Color (visual)

  • Reference: ivory to pale yellow, translucent when melted
  • Early degradation: amber tint
  • Significant degradation: orange-amber
  • Severe degradation: dark amber to brown
  • The brownness is not random — it is specifically Maillard-type polymeric oxidation products, the same compounds the bentonite column adsorbs

Odor at 70°C (olfactory)

Warm a small sample to exactly 70°C in a covered vessel, then uncover and smell:

  • Reference: neutral, mildly fatty, clean
  • Early degradation: faintly grassy or painty (hexanal)
  • Moderate degradation: "old fat" note ((E)-2-nonenal)
  • Severe degradation: rancid, harsh, deep-fried staleness

Water Drop Test (FFA proxy)

  • Place fat drop on clean dry glass at room temperature
  • Add water drop
  • Reference: discrete water bead, maintains surface tension, does not spread
  • High FFA: water spreads and partially emulsifies (FFAs as endogenous emulsifiers)

Paper Towel Test (combined)

  • Dip white paper towel in fat at 60°C
  • Reference: even pale yellow absorption, no dark patches
  • Degraded: dark patches, uneven absorption
  • Run after each bentonite treatment — endpoint when no further improvement visible

Fermented Preparation Assessment

Color Assessment

Color observation Significance
Deep purple-red Anthocyanins from red onion, red cabbage, tart cherry well-extracted
Orange-yellow tint in brine Curcumin extracted and distributed in oil phase (emulsification working)
Clear to slightly turbid Normal — protein hydrolysis and bacterial biomass
Muddy grey-brown Investigate for putrefaction — different from the amber-brown of normal mature ferment
Fading purple over time Anthocyanin degradation — check pH (more acidic = better stability)

Aroma Assessment (olfactory)

Healthy:

  • Dominant clean lactic sour
  • Secondary diacetyl cream note
  • Botanical complexity present and identifiable (garlic, ginger, thyme)
  • Mild earthy-indole in mature batches (acceptable)

Investigate:

  • Any putrescine/cadaverine character (rotting flesh)
  • Dominant H₂S (rotten egg)
  • Strongly alcoholic
  • Sharp pure acetic without lactic character

Taste Assessment (gustation)

Healthy batch profile:

  • Pleasantly sour (pH confirmation)
  • Complex bitterness (active compound presence)
  • Umami depth increasing with age (protein hydrolysis)
  • Mild salt (osmotic environment)

Investigate:

  • No bitterness (active compound degradation)
  • No umami (fermentation stalled — protein not being hydrolyzed)
  • Metallic taste (mineral imbalance or vessel corrosion)
  • Soapy (high FFA from degraded botanical fats)

Trigeminal Assessment

Run systematically through each compound-specific sensation:

Developing Individual Sensory Reference

The sensory system is trainable. Over repeated assessments:

  • Specific off-notes become recognizable earlier
  • Compound-specific trigeminal signatures become distinguishable
  • Batch-to-batch variation pattern becomes apparent

The goal is developing the capacity to assess a batch in 2–3 minutes and identify any significant departure from the established profile — a skill that comes with 5–10 systematic assessments using the framework above.
